Veggie Fritters ala Okaasan

Before I had my RAI, the doctor instructed me to go on a 'special diet' to keep my iodine as low as possible. I've searched the net for weeks to get every nutritional facts I need to suit my diet and not sacrificing its taste as well. And so, we’ve come up with an easy-to-do and yet nutritious dish.
Here it is!!!
Veggie Fritters
Ingredients:
a cup of cooked mixed vegetables (diced carrots, potatoes and corn)
1/2 cup of flour
1 tsp of sugar
a pinch of salt and pepper
1/2 cup water
Procedure:
1. Mix the dry ingredients and add the water to form the batter.
2. Toss in the vegetables and combine well.
3. Drop by the tablespoon on an oiled pan and cook until light brown on both sides.
4. Serve with salsa or ketchup.
